Ok yall, it’s time to eat! For today’s dinner, I’m bringing out one of my absolute faves—my Marry Me Chicken! This dish has earned its title, and I swear, it’s the kind of meal that could get someone to pop the question—seriously.
But, here’s the deal: I want to caution you: do not make this chicken unless you are really ready for him to get on one knee and ask you to marry him! HAHAHA, just kidding… but seriously, you might want to hold onto your heart because this meal is THAT good.
Perfect for date night? Absolutely. But honestly, it’s also perfect for any night of the week when you just want something super satisfying. It works for lunch too basically, it’s the perfect dish for ANY occasion where you want to impress and chow down on something delicious.
I made this Marry Me Chicken with mashed potatoes and a side of asparagus, but you do you, switch it up with noodles or whatever veggie makes you happy.
The sauce on this chicken is so rich and creamy, it’s enough to make anyone weak in the knees. Trust me, you won’t regret it. So, if you’re ready to dive into this yumminess, then let’s get started!
Ingredients:
1 cup all-purpose flour
1 cup chicken broth
1 ½ cups heavy cream (add more if you like that extra sauce—no judgment!)
1 cup freshly grated Parmesan cheese (the real deal, folks!)
½ cup sun-dried tomatoes (Recommend dicing these in small pieces).
1 cup chopped kale (yes, get those greens in there)
2 tablespoons minced garlic (because garlic is life)
Salt and pepper (you know the drill)
Garlic powder (add the amount to your liking)
Onion powder (add to your liking).
1tbs Smoked paprika
Cayenne pepper (a little heat never hurt anyone)
Italian seasoning
Red pepper flakes (optional, if you want a little extra kick)
2 tbs avocado oil (for searing that chicken to perfection)
3 tbs unsalted butter (split between the sauce and cooking)
Fresh asparagus (or any veggie of your choice)
Instructions:
Prep that chicken! First, season your chicken breasts with salt, pepper, garlic powder, onion powder, smoked paprika, cayenne, and a little Italian seasoning. Make sure both sides are well-coated.
Season the flour: Next you’ll want to season the flour with some love! Sprinkle in all the same spices you used for the chicken, so it’s just as flavorful and ready to bring the crunch!
Sear the chicken: Heat up your avocado oil and 1 tablespoon of butter in a large skillet over medium-high heat. When it’s nice and hot, add your chicken breasts and cook them for about 5-6 minutes on each side or until golden brown/fully cooked. Once done, remove the chicken from the skillet and set it aside.
Make the sauce: In the same skillet, add your minced garlic and sauté for about 30 seconds until fragrant. Then, pour in the chicken broth and heavy cream, stirring to combine. Bring this to a simmer, and let it cook for a few minutes to thicken up a little.
Add the cheesy goodness: Stir in the freshly grated Parmesan, sun-dried tomatoes, and chopped kale. Let it cook for another 2-3 minutes until the sauce becomes thick and creamy.
Put the chicken back in: Return the chicken to the skillet and coat it in the sauce, making sure it gets all nice and saucy. Let the chicken simmer in the sauce for another 5 minutes. Don’t be shy—pour that extra sauce over the chicken to really seal the deal.
While the chicken is simmering: In another pan, heat the remaining butter and sauté your asparagus with a pinch of salt and pepper until it’s just tender but still has a little crunch (about 5-7 minutes).
Serve it up: Plate your chicken with that creamy, dreamy sauce and serve it alongside mashed potatoes, asparagus, or the veggie of your choice.
